Just made the Michelin one-star list! It's cozy and doesn't focus on fancy plating. It’s extremely hard to get a reservation, but luckily, my friend managed to snag one, so off we went. We chose the 7-course tasting menu, with a mandatory 20% tip, making it about $200 per person. It was truly salty—I drank 12 glasses of water at the restaurant! 😅😅😅 👉 Amuse-bouche ⭐️⭐️⭐️✨: Smoked pig face wrapped around green mussels, topped with cherry sauce. It was oily and extremely salty. The pig face was tender, and the mussels had a minimal presence with no fishy taste. The cherry flavor was faint and quickly disappeared. 👉 Crab & Shallot ⭐️⭐️⭐️: Raw daikon wrapped around Quebec snow crab, highlighting the sweetness. The green sauce was a bit bitter. I’m sensitive to seafood and felt it had a slight fishiness, though my friend didn’t notice any. Must be my issue! 👉 Scallop & Gooseberry ⭐️⭐️⭐️✨: Apple and cucumber scallops! One was fishy and the other was not—quite the contrast. The outer crust was crispy while the inside was extremely tender. The sauce was creamy with a slight tanginess. 👉 Bread ⭐️⭐️⭐️⭐️✨: Purely alo-style bread. The crust was very crispy, while the inside was moist and elastic. It had a humble, aromatic flavor and was perfect for cleaning up the plate. 👉 Chicken & Morel ⭐️⭐️⭐️⭐️: The dry garlic shoots on top were nice, and the morel mushrooms were fresh but quite salty. The chicken was like salted chicken—dense and not dry at all. The skin was crispy with a duck-like texture but not oily. The sauce wasn’t suitable for dipping the bread. 👉 Fennel & Endive: So healthy 😅—suddenly a bowl of vegetable salad arrived. I’m not going to elaborate; the ingredients sound fancy with a lot of complex terms. It was basically cabbage stalks, pea shoots, and Greek yogurt dressing.
