📰 Chef Michael Hunter, a wild game hunter who grew up outdoors, has compiled over 100 recipes and butchery guides in his published book The Hunter Chef Cookbook. The restaurant serves a variety of wild ingredients, from moose and bison to white-tailed deer and wild boar, as well as common wild turkeys, ducks, geese, grouse, and even rabbits and squirrels. For seafood lovers, they offer salmon, wild salmon, rainbow trout, shrimp, scallops, and more. Every dish, from the mains to sides and desserts, features wild ingredients, including mushrooms, leeks, and various berries. 🌲🍇 🌊 Scallop Crudo: Scallop sashimi that is very sweet, paired with salmon roe and a light yellow dipping sauce. Fresh and worth trying! 🦪🍣 🦢 Seared Foie Gras: Rich in fat, as expected, but it seemed overcooked. The burnt taste overshadowed the seasoning and foie gras flavor. We mentioned this to the server and swapped it for the dish below. 😕 🍣 Tuna Feature: Seasonal tuna sashimi recommended by the server, but it might not have been prepared correctly or was not very fresh, resulting in a slightly fishy taste. 🐟 𐂂 Pan Roasted Venison Rack: A heavy-hitting main course! Venison! You can tell just by looking at the cover how tender this meat is. Ordered medium-rare, it was incredibly tender and juicy with no off-flavors. Even without sauce, the dish and its side of vegetable puree with blueberry jam were delicious. The sides included finely roasted carrots and a vegetable patty—clean plate! 🍽️😋 🥩 Alberta Bison Ribeye: Wild bison steak that tastes very similar to regular beef steak. Well-cooked, but seasoning was minimal—just basic salt and black pepper. Still, it was well-prepared. The sides of mashed potatoes and crispy onion bits were devoured completely. 🥩👌 🍝 Mushroom Casarecce: This pasta was incredibly flavorful with mushrooms and black truffle. Absolutely fantastic—highly recommend it! 🍝🍄 🍰 Wild Ontario Pawpaw Semifreddo: Pawpaw fruit is something I’d never heard of before. It’s a wild fruit with a white meringue that is slightly sweet. If you’re not into this dessert, you might want to try something else. 🥄🍰 ⋆⌁⌁⌁ .𓈒𓂂 𓈒𓍼 ⌁⌁⌁⋆ This wild game restaurant was a new find from my friend’s collection. Aside from the foie gras, the three of us finished everything. We didn’t order alcohol (as we headed to another bar afterward). It's a popular spot among locals and tends to be on the smaller side, with a Google rating of 4.8. If you’re interested, remember to book in advance!
