Two Bowls of Ramen That Expand the Boundaries of Perception
As someone who always craves a rich and oily broth at Ichiran, I used to think that only tonkotsu ramen could satisfy my heavy-taste appetite. ๐ข Today, however, I was completely tamed by a bowl of shoyu ramen and a bowl of shio ramen, to the point of licking the bowl clean. The shoyu ramen is based on a clear and sweet chicken broth, with the addition of porcini mushrooms and black truffle, which add a rich and deep flavor, subtly blending the soy sauce into the mix. ๐ The charred chashu then introduces a strong aroma of charcoal grilling. When you're overwhelmed by these successive bursts of flavors, the shiso leaf cools down your almost overloaded taste buds, miraculously harmonizing everything. It's truly a masterstroke. ๐ As for the shio ramen, to be honest, I was initially disappointed by its seemingly bland taste. But a magical twist happened after I had the shoyu ramen. It seemed like my taste buds finally woke up. ๐When I tried the shio ramen again, the extremely fresh and sweet fish flavor in the broth finally reached my tongue, surpassing the chicken broth. There's also a hint of yuzu in the aftertaste, creating a very distant and lingering charm. Unexpectedly, it forms a perfectly complementary combination with the shoyu ramen. ๐ธ I'm truly grateful for such delicious food, which once again makes me realize my own limitations.
