é by José Andrés is arguably one of the hardest reservations to score in Vegas! I’d previously tried Bazaar and really enjoyed it, so when I heard é was even more impressive, I knew I couldn’t miss it. (Shoutout to the foodie group where someone tipped me off about a last-minute cancellation—that’s how I snagged a spot! 🙌) As a restaurant focused on molecular gastronomy, most dishes are about deconstruction and reconstruction. Each course plays with your expectations—what you see is rarely what you taste! 🎭 While I didn’t find every flavor mind-blowing, the presentation and creativity were seriously fun, especially for my first real molecular dining experience. The service felt almost like a performance, making the whole meal fresh and engaging—and there were so many courses!👌💕 Overall, é by José Andrés stands out as something truly unique in Vegas.
