The fish skin is crispy while the flesh is tender and unseasoned, preserving its natural taste. It's served similarly to Peking duck; dip the hard rice paper wrapper in water for two seconds, add fish meat, side dishes, rice noodles, and sauces, then roll it up to create your own Vietnamese spring roll version. Don't forget the shredded coconut and ground peanuts on the baking tray when rolling—it's amazing. There are many options in the Rice Paper Wrapping series; you can roll whatever you like. 👉 Lotus Rice $24 👍👍 Fried rice wrapped in a lotus leaf, topped with stir-fried cured meat, chicken, shrimp, and shredded wood ear mushrooms. I rarely order fried rice at restaurants, but this one is truly fragrant. 👉 Banh Xeo Saigon $13 Vietnamese pancake, a common street food. Although it's yellow, it doesn't contain eggs and has the feel of a scallion pancake. Upon unfolding, it's filled with a surprise—barbecued pork, shrimp, and bean sprouts. The conch has sweet meat but is too small, making it tiring to suck out.
