Why isn't Saito's name as resounding in New York? (1)🌊

📍 New York Rice One|Shion 69 Leonard Street 🌊 When it comes to Tokyo's omakase, Sushi Saito is always the top-tier place everyone talks about. It has held Tabelog's gold medal for years, once earned three Michelin stars, and even rejected Michelin's rating because it doesn't accept general reservations. Since it only takes reservations from regular customers, Sushi Saito is indeed a very mysterious existence to many diners around the world. 🍣 🌊 When talking about New York's omakase, many people would think of Yoshino, Nakaji, Sushi Ichimura, and Noda. But not many would immediately think of Shion. As an eight-year apprentice of Takashi Saito, Shion Uino has an impressive resume. However, despite the chef's famous title, it hasn't brought much visibility to the restaurant itself, which is quite curious. 🤔 🌊The drinks and snacks part is quite satisfying with the hairy crab. The standing scale dumplings don't look very good. Some scales have even fallen off, and I saw many similar comments online, which means it's not a one-time thing. 🦀 #NewYork
