My wife and I dined at the gourmet restaurant "La Condesa" on a Saturday in July 2021. This was my second visit there and I use this opportunity for an update of this assessment.

Service: The team was very friendly and obliging. I found the atmosphere very relaxed.

Food: The menu was very carefully arranged. The level of all dishes and components was very high. We liked everything very much and we were very content with the range and depth of the aromas. Compared to my first visit in Nov. 2019, I think the kitchen has significantly revised its style: At the time, I described the food as slightly experimental, and I even found the structure of the flavors a bit challenging in one or two instances. At our last visit this was different: All dishes were very accessible and tasted very good - comfort food.

Wine: We found the wine pairing very good to outstanding. The wines - most of them from Italy and Spain - were also very accessible and always matching to the dishes. The restaurant serves barely half-filled glasses - we appreciated this very much.

Presentation: I found the presentation of the dishes and components good. The colors were appealing in one or two instances. The decorations - concentrated on the tableware - were quite appealing. The textures were very appealing in many cases, in some cases even elaborately arranged. Once a simple surprise and a simple effect with positioning was included. In one case a component was added to a dish at the table. The sizes of the dishes were perfect. I found the timing too fast at the beginning. Therefore, we asked the team early on to slow down. After that, the pace was very good. The wines were presented quite appealing, too. In a modern style and informative in one or two cases.

Premises: I liked the design of the room, which I would describe as restrained. The restaurant is very small. It felt a bit cramped, but no more than seems to be usual for Paris.

Price: In my opinion, the price-performance ratio was very good.

To sum up, I would say that "La Condesa" completely fulfilled the very high...

The interesting thing is that the chef masters different techniques from around the world. You end up dining in Paris and traveling all around the world. The chef does this very seemingly, so it seems all very natural , and it’s only after the meal that you realize how far you traveled. I think that’s the feat here. The feat is not that it’s international, the feat is that it makes you forget that it is, because it’s done so well.

It’s another very solid one star.

Update 2022: Went back a second time in 22, as I already came in January. For personal reasons first, as the memory of the evening was dear to me. But also because one could sense the potential, I needed to pay another visit to better understand.

What is really troubling here, in a good way that is. The chef perfectly masters the French cuisine, even some Japanese. Not the cuisine of French recipes, but the way it’s done, its code, its principle. Let’s say the grammar. But then he expresses himself using meanly French grammar, some Japanese ponctuation and add some Latin American vocabulary. Hence my first impression, where I said you were traveling without realizing. It’s because you’re traveling in his universe. I really enjoyed this second visit, even more than the first one. I do think there’s an evolution. The plates are more mature, balanced and the general tone can be easily heard behind each note. The crowd, for a dinner, was business, friends and couples. Some international by the way, it seems the address start to be known. The atmosphere is chic but friendly. It’s not a Bistronomic but it’s more relaxed and fashionable than a classical Michelin star. Note that the restaurant moved a little bit down the street, so it’s brand new and more roomy that the previous edition.

Van buiten slechts een nette kleine gevel die je zo voorbij loopt. Van binnen compact en strak modern ingericht met op de achtergrond een jazzy muziekje. Langs beide muren een bank met hieraan bistrotafels die je makkelijk kunt schakelen. Achterin de open keuken waar de koks druk in de weer zijn. De velours gordijnen maken het wat chiquer en dempen tevens het geluid. We kregen een tafel aan het raam, fijn.

Als aperitief een bourgogne Aligoté van Goisot die erg goed beviel. Het eerste hapje was een sandwich van dunne driehoekige crackers waarop zonnebloem- en pompoenpitten, ertussen zwarte olijventapenade. Goede textuur met een hoofdrol voor de zaden in de smaak.

Er verscheen een enveloppe met hierin een briefje waarop wat leuke informatie.

Op een lepel een spinazieblad gevuld met een mousseline van heek, op de punt van de lepel een crème van witte miso, heel smaakvol.

Er verscheen een bloempot met witte bloemetjes, op de aarde lag een witte aspergekop in tempura afgewerkt met mayonaise van zuring. Lekker sappig en verfijnd.

De laatste amuse kwam in een wit schaaltje, onderin een gelei van augurken, centraal huisgemaakte ricotta afgedekt met dubbel gedopte tuinboontjes, ernaast zoetzure plakjes courgette en stukje brikdeeg. Een verrassende smakencombinatie, mooi in balans.

De wijnen werden blind geschonken, zo kon ik raden wat het was, wat behoorlijk tegen viel. In een blauw schaaltje een saus van de radijsbladen met hibiscus waarin centraal een tartaar van zalm met stukjes frisse rabarber, afgedekt met een witte radijsemulsie, ernaast nog een halve radijs. Een hele mooie slaakencombinatie prima in balans met verfijnde textuur, genieten. De verfijnde cuvée Freesia 2017 uit de Cevennes van Mas D'Espanet sloot hierbij naadloos aan. (9,6)

Verder met voor mij de topper van de middag. Drie gevouwen verse ansjovisjes met ertussen een ricotta van geitenkaas, centraal een broccolipuree en een crème van knoflook, verder nog een salade gemaakt van drie bereidingen broccoli met verse kruiden waaronder koriander. Een originele combinatie met hele verfijnde smaken met hier en daar een meer uitgesproken toets. Ernaast de L'Inopine 2017 uit de Luberon gemaakt van Grenache blanc, Vermentino, Roussane en Viognier die keurig in balans was. (9,8)

Hoofdgerecht vis, was bruingebakken kabeljauwfilet op een bedje van doperwten en spiterwten met ertussen wat knoflook in een saus van erwt met bergamot, aan tafel afgewerkt met de gebakken schillen van de erwt. Lijk heel simpel maar het was verrassend smaakvol. Mooie cuisson van de vis en verrassende toetsen van erwt. Ernaast een chardonnay in oxidatieve stijl uit de Jura die het gerecht nog iets spannender maakte. (9,7)

Hoofdgerecht vlees was gerijpte kip uit Culoiseau in Normandië met ernaast twee wortelen gelakt met karwij, erop verse koriander en dille, ernaast de smaakmaker van het gerecht, een Mexicaanse saus gemaakt van pinda, chilipeper en bonen volgens het recept van grootmoeder. De kip was ietsje droog maar mooi hoog op smaak, de zoete, kruidige wortelen en de saus combineerden prima. De xb 2017 gemaakt van syrah van Terrasse d'Elise miste wat fruit maar combineerde goed. (9,6)

Het eerste dessert was een gelaagde chocoladecake met rode bes en roze peperballetjes ernaast krokantjes van chocolade en karamelijs aan tafel afgewerkt met een romige saus. Goede smaken met lekkere peper accenten. De Pinot de Charentes van Francois 1e bleef hiernaast keurig overeind. (9,5)

Verder met verse Franse aardbeien, ernaast een luchtige Griekse yoghurtmousse, op stukjes merengue wat rode peper jam en een quenelle sorbet van aardbeien en rode peper. Ernaast Poiré Authentique 2015 van Eric Bordelet die het gerecht met zijn peren toets aanvulde. (9,5)

Bediening was uitstekend verzorgd, heel correct met gezelligheid.

Prijs-kwaliteitverhouding vond ik uitstekend.

Kortom, een aanrader voor levensgenieters en...

I appreciated the fact that they were able to find a table last minute and accommodate us. However my main complaint is for the seating. It’s not very comfortable being directly on wood and the tables are way too close to each other. It feels like you’re eating with other people and you don’t have a sense of privacy at all. However the service was well done and the description of the plates was very well given. The aperitif weren’t very memorable however the buckwheat linguini will probably always be in my mind as they were exceptional. I would have taken away only one star because of the seating but I feel obligated to take another one away for the deserts… I understand trying to take another turn onto a desert and attempt something on the bitter side, but this desert was far too bitter. That’s all I could taste, it covered everything else and to be honest it was an unpleasant ending to the tasting menu. The presentation however was always stunning and the colors were also elegant and exciting. And it presented variation between the plates, when it came down to presentation techniques and selection of innovative ingredients. I suggest this restaurant but I hope they change the seating and by now the desert menu is probably different so it’s still a worthy experience.

La Condesa was fantastic, and i would highly recommend! The food was very creative and exceptional not only in presentation but also with taste. Sometimes restaurants try so hard on the creative that they lose out on the taste, this was not the case at La Condesa. Many dishes had multiple elements and textures, which almost felt like opening a surprise gift. There were many unique dishes that were difficult to guess what the dish would taste like as well. The proteins in the main dishes were all cooked to perfection, and the desserts were very lovely. The owner chef came around to check each table and have small conversations while passionately explaining the food, which showed that he and his staff really care. He even gave us some extra chocolates when we complimented on them on our way out. :) Constructive feedback: 1. The mushroom broth was served very hot, and I burned my tongue a little after using the metal straw. This hindered me from fully enjoying the other dishes served later unfortunately. 2. The wait time between dishes were quite long when more guests came in later in the night. The restaurant kindly gave our petit four to go so we could leave earlier, but would have been better to be served quicker.
