As a Korean, I had to try this food truck. I ordered a Kimchi pancake (Kimchi pajeon or Kimchijeon), which is one of the things traditionally made with overly sour Kimchi. I saw her put something in the fryer, which looked like tofu. I asked her if it was tofu and at first she didn't understand, because my french is so bad. But then she said no. Then she boxed it up and gave it to me and I realized it was pancake cut into squares. The pancake was like a pan bread, with only a trace of Kimchi flavor, instead of the spicy sourness that I love.
