We just visited this place for a small date. I wanted to eat ramen again after my previous favorite place closed doors. this is my new favorite ramen place. :)
we ate shoyu with duck and miso with seafruit.
both base soups were made to be less salty and stronger in their respective base taste and this change blew me away. it was the best ramen i ever had because of this.
there was just one thing i hope they will change: the noodles were way too soft. it made the noodles fall behind in the overall composition, they were barely noticeable. the amount of them was large, which is nice, but not necessary. id rather have less, but chewy noodles.
i never ate duck in ramen before. it was classicaly spiced and it fit extremely well with the taste of shoyu.
the miso soup was not pure miso, which will polarize guests. i think it would be a good idea to communicate what they mixed in on the menu and try to offer pure miso as well.
that said: i preferred their unique combination over the miso soup of other places by a large margin. it was a heavenly combination with the seafood my date ate.
I'll actually likely order this miso soup with salmon next time. we will definitely come back.
the portions were large and well satisfying. this was not just street food, but a proper main dish.
pricing is okayish for the size, but very good for the quality.
the ambiente was also really nice. simple, but open, tidy and clean.

She understood I am not German from my question and asked if I have a German card. I said yes it is a German card, then she asked me to show the card. I said again yes it is a German card and she kept insisting to see my debit card which I found uncomfortable, disrespectful and discriminating. This place does NOT sell classic Japanese Ramen. It's a scam including fake reviews to cash in on the "Ramen trend". There is a good selection of great Ramen places in Hamburg. Avoid this one unless you just want some Vietnamese noodle soups more close to a Pho.
