First things first, your service staff needs to learn to not tell lies. The Sula wine ordered was very bad as the temperature was abnormal. The "mirchi ka salan" served with the biryani (a-la-carte') to a Londoner on the table was cold. When she enquired, she was told that it is supposed to be served cold. She has visited India many times (works for Microsoft) and knows her food. The lady server was then insisted to go and get hot salan, but she again said "Salan is to be served cold like the cold Raita" 🤔. Finally I had to intervene to get her hot salan from the buffet. I am an Indian on the same table and a long time patron of Hyatt, I was ashamed to have recommended this restaurant for a Team Dinner that had foreign nationals from multiple countries.
Mr. Saurabh was in the restaurant, not sure if he was the Service Captain or Restaurant Manager, but he shud have intervened often to check on the service.
Now some good things, a few food items on the buffet were very tasty - Dal Makhni, Lotus Stem Curry, Paneer Curry, we were served hot phulka's on the table.
And a few items were stale or incomplete - the salad had no feta cheese (though it was named that), no one bothered to come and check to top up the salads (shows the 'we don't care attitude'), the veg biryani on the buffet was definitely stale (looked like it was made in the afternoon and reheated), same story with the curd rice (was not fresh, just utting fresh tempering doesn't make the food fresh, you need to prepare it with fresh ingredients), the soups on the buffet were cold (hotplates were not on, someone might have forgotten), 8 pax on the table (about 25 pax in the restaurant on a Thursday evening), we had to wait for soup bowls, dessert spoon, table clearance, ...
You don't reduce the pricing of the buffet as the night progresses - right, then why does someone coming in at 9:30pm see less food, messy servings and empty salad bowls too??
And it's surprising that you don't serve 'Mocktails' in the Lounge Bar 🙄🙄 ... Except water and the very very salty Lime Soda (Salted) that I was served....

There is definitely a change in the last few weeks on my last visit I really enjoyed everything this time around not really satisfied. The fish chowder soup had a very pungent order and so did the other fish preparations, Machar jhol tasted great but for the smell. Mongolian live counter was just stir fry counter just regular veggies mixed in noodles. I had expected more flavorsome noodles but it only turned out to be chilly spicy. The service is excellent though as I was with small kids and they enjoyed eating here. The desert section also left me wanting for more. Outdoor setting would have been lovely but for the mosquitos.

Coming to infrastructure, we need to follow up for power extension, c-type connector for projector and they limit Wi-Fi access for only 5 members while they charge meeting room for 30 people. Live counters are name sake - Dosa is bland without any taste. I had Thai soup coconut milk based which is good. No avacodos in avacodo salad. Sea food isn't fresh - texture and smell does tell it. Coming to main course, worst thing is Mutton Biryani which is cold with uncooked Mutton pieces(used the frozen Mutton) .
