Two Paisan's Pizzeria & Cafe — Restaurant in City of Rochester

I'm going to address the atmosphere getting a 4 star rating first....it's Charlotte and there isn't any need to elaborate on that, because it doesn't have any effect on my impression of this establishment.

First and foremost I want to address the previous bad reviews, in particularly Danny H. If you order 2 different pies and don't like one of them, that doesn't mean the entire establishment gets a bad review. And you can't compare these wings to Windjammers (which has held the trophy in Rochester for decades). So Mr H, stick with Salvatore's and all of the other mediocre establishments around town, that is clearly what you are used to and value....

Now, let's focus on Manny and what he is building. Two Paisans isn't like any other pizza joint in town. It's crust is thin with enough resistance to support whatever toppings you choose. The pizza oven is well seasoned to provide a strong crunch without burning. The dough has flavor and compliments every topping I have tried this far; a total of 8 different pies. Every time I have stopped in, I have seen Manny teaching new staff HIS process to build a better pie. His sauces are all homemade and he takes care to make sure they are the way he wants them, and he maintains consistency; which is what you need when you trust your staff and build a successful following. The Alfredo isn't cream heavy without flavor, it's not too thin to be a pizza topping, but not so thick it feels like glue; it's garlicky, a little bite of parmesan, and matches his al dente pasta without running off. His vodka sauce has a little spice, and tomato flavor without losing the slight burn of the vodka. His marinara tastes fresh and well seasoned without being sweet or too acidic. You can tell he puts the effort into his craft and cares that you, the customer appreciates it. Now let's discuss the obvious pink elephant in Rochester pizzeria scene--chicken wings.... You can be a contender in the upstate New York wing game on one condition, IF you are unique and original. You cannot compare to Windjammers or Country Sweet, or any other of the places that all do the same thing. Fortunately for me, and my opinion, Two Paisans doesn't do that....I don't know if these are oven roasted, fried, or both. Are they marinated? I just don't know. I don't know what he is doing, but these wings are good; and what makes them good, they are different and cared for just like his dough and sauces. They aren't just a little good, they are fantastic. It takes a lot to claim my next statement....Two Paisans is Long Island and NYC approved.... Keep doing what you are doing man, let those couple of bad reviews slide, you are...

Absolutely fantastic place to get high quality food.

Prices are good, and the quality of the food is top notch.

I had the stinger sub with their signature blue and gold wing sauce and a bit of added blue cheese and blue cheese crumbles. The bread was perfectly cooked so it was flakey and nice and crisp. The steak on the sub was tender and juicy and had a light bit of charring on the edges and the chicken breast on the sub was so flavorful. Nice and crispy, and lightly breaded and lathered in the wing sauce just right. Not too overbearing to where it makes the bread soggy, and not too dry to where it's hard to pick out the flavor.

The owner is very friendly, and all the employees there are very pleasant to interact with. They are very punctual and there is very little wait time outside of the reasonable expectation for walk in orders. I go in and order my food, and am out the door on my way home within 5 to 10 minutes.

I first found this new pizza place about 2 weeks ago it was really good I stopped in and got 2 slices of pepperoni Brooklyn style pizza but tonight I ordered a family size calzone which my mother ate and a xl Brooklyn style pizza with extra cheese and extra pepperoni for the rest for some reason now the pizza has huge tomato chunks and some kind of green vegetable stalks in it also seemed like regular amount of cheese not a fan of eating whole tomato slices so not very enjoyable very disappointed because the first time was so good idk if they gave me the wrong pizza but won't be ordering delivery again so I can check the food before hand if I...
