Found out about Fillmore Pizza Kitchen through our realtor who mailed us a "buy one get one free" pizza voucher. I always Google research an establishment before visiting to get some type of idea of what to expect. And to be honest, knowing that this restaurant was inside a hotel, I had already lowered my expectations. After pulling up and seeing the entrance from the parking lot, I was impressed by the noticeably large sign out front. Once we entered, the hotel staff greeted us with smiles and were very nice. We mentioned that we were here to have lunch and not looking for a room. They were fine with that and stated that we could seat ourselves anywhere we liked. My wife wanted to sit at the bar and found a couple of chairs and immediately our bartender Eric greeted us and we showed him our pizza voucher. We could tell that he had seen a million of these vouchers and explained to us what exactly was free under the voucher. My wife ordered the artichoke dip and a 10 inch veggie pizza and I ordered a 10 inch pepperoni. My wife wanted a glass of wine and the bartender explained that the owners wife is a wine connoisseur and handpicked all the wines. Eric gave my wife a couple sample tastes and she picked one of the red wines which tasted good with the homemade artichoke dip and fresh veggies. The pizzas came out shortly afterwards and they looked great. The crust had the perfect taste and texture. Crunchy and soft at the same time. Delicious! We ordered a couple of desserts as well and they too were outstanding. We learned from Eric that the lasagna, meatballs, sauces, dips, salad dressings and some of the desserts are all made from scratch right there inside the kitchen. Read moreRead moreI’ve been wanting to try this place out for years (since it was a food truck in front of the hotel). I used to pass by on my way to work daily. I saw it was in DoorDash, so I placed my order online. It said they were taking orders until 8:30P. I placed my order around 8P. I got a notification that my order was cancelled around 8:20, very disappointing but hey, it’s happens! I waited another couple of months and decided to try again. I called ahead and ordered for pick up, I was instructed by the FD person to wait at the bar for my order. I sat at the bar and was not greeted. A lady who appeared to be a manager asked if I was waiting for my order and I said yes, she rang me up. I sat there in silence and she tinkered with this n that behind the bar. Never made small talk, never asked if I wanted to buy a drink. It was awkward silence. She rarely acknowledged me as I sat In front of her for 51015 minutes. She just kept saying it’s a “few” more minutes. I went to wait outside and came back in to check periodically and she just kept saying a few more minutes. At this point it’s been about an hour, I was quoted 25 minutes. Still, no apology, no real ETA, no small talk. She finally refunds us and sends us walking without food. She could have saved me an hour and not charged me from the start. I’m the GM of a hotel, I understand some days are rougher than others but man, crack a smile. Firstly this place is a part of the Best Western motel, so the dining area is the same place where hotel guests have their continental breakfast but it get changed into a restaurant for lunch and dinner. From what I saw the wait staff also works the bar and it looks manageable for them. We ate here on 2 separate occasions during our 6 day stay and the food was really good. The 14" pizza will feed your average 2 adults the 10" fed our 2 7 year old boys. The pizzas were good we had the cowboy and the jalapeños were hot and made it that much better. The boys wanted pep and bacon and it was also good based on the little taste they gave me. The only thing with the pizzas is the dough through most of the center of the pizzas will be really soggy and nearly impossible to eat neatly but it didn't take away anything from the taste. I also the a pair of meatball sliders same thing really messy to eat and the bottom part of the garlic knot bread is super soggy but they have lots of mozzarella cheese and were super tasty. Our 2nd meal there boys just did repeat and my wife ordered lasagna, I had a meatball sub. Pizza was consistent with previous order and good and messy. Lasagna was really good and enough to serve 2, only down side was it is served with garlic knot bread but all in the same container so again the bread ends up all soggy. My meatball sub was really tasty with nice toasted bread plenty of marinara sauce and mozzarella cheese. I would happily stop by here to dine in next time we are in Colorado...
