Amazing birria! Stopped for lunch on our way to Smith Rock and got so excited to see an entire food truck dedicated to birria. We had the burrito, ramen, and tacos. Everything was cooked perfectly and made to order (some dishes without cilantro). The cheese in the tacos was perfectly melted and the tortillas were the right amount of crunchy and chewy. I might drive just to Redmond again to get these tacos. Seriously, so good. Also liked that there was an enclosed playground for kids at the pod, that made it really nice for the kids to do something while waiting for our food!

I love birria, and this food truck did NOT disappoint! The original birria street tacos are fantastic, and the quesabirria was delicious! It’s a quesadilla filled with birria, cheese, sour cream, cilantro and onions, how could it not be scrumptious? If you live in Redmond this could be your new favorite food truck. If you’re passing through, I do not think you’ll be disappointed. Birria is a flavorful Mexican stew or soup bursting with flavor from the marinating and cooking process. The meat shreds easily and the broth/juices are used for dipping. ¡Birria es mi favorito!

If you’re looking for a filling and delicious snack for $5.00 this is the place to go. I had a mulita which is two crispy taco shells with shredded beef and tons of cheese and some scallions and probably some other things but that’s the main part of it. They give you a slice of lime, 2 different salsas and their special dipping sauce which makes it a crispy and juicy meal. It’s a cart of course but it’s got a roof over picnic tables and is just fine. You’re out of the sun. I bet the rest of the menu is just as good.
