Alright, well let me start this off by saying: I LOVE PIEOLOGY PIZZA. I love the way they press the dough because it looks like something from the future, I love the way i can pick whatever toppings i want (just like subway), and i love that if i am feeling indecisive I can choose a signature instead. I had a really flat tire on my way to work and decided i needed some nourishment so i stopped in (because who doesn’t like pizza) and i was just WOWED. Their restaurant is sooo much cleaner than most fast food places, i mean if there is a bar they’ve raised it straight to the moon. I was so impressed by their many chic decorations and just the homely vibe of the whole place. There weren’t too many people in the building which made sense because it was like 11am on a monday so i assumed most of their orders were takeout. I know that sometimes it can be really hard to keep a store like this clean with all of the hustle and bustle but honestly the floors and tables were spotless, i was genuinely impressed. The fella who was out and about greeted me as I walked up which made me feel even more welcome. I love it when employees seem to care! Or at least fake it til ya make it! I mean who wouldn’t be happy though being surrounded by pizza all day! This guy was spot-on too, asked me how my day was, kept a nice conversation going, and even told me about his day too! i just really like it when a restaurant doesn’t feel quite so transactional. Ok. Now to the pizza!!! Pieology is mega awesome because, like i said, you can choose whatever you like! Thick crust looked really good and so did the stuffed crust but i am more of a artesianal kinda gal so i went with the thin crust which was SPECTACULAR. Then you get to choose whatever veggies, meat, cheese, and sauces you’d like which is so nice because usually when i get a premade pizza there’s always one ingredient i DONT like but Pieology totally eliminates that possibility. They’ve also got a SUPER sick stone oven that cooks the pizzas right in front of you which i freakin loved. To be honest i just started writing this review while i was watching my pizza cook so let me get back to you once i’ve had a bite - and WOW. Tastes just like it looks!!!! Dough is airy and crispy at the same time, with that familiar char that you only get with the most authentic of italian pizza ovens. If you love pizza, pieology pizza is for you. Watching the employees cook the pizzas is so cool too, the fella was spinning them with such ease i could only dream of myself standing in his position. Even though i was staring the whole time he still cooked it to perfection! Read moreI’ve came to this Pieology many times but now I don’t feel very comfortable returning. I only get cheese and pepperoni from the array of toppings, however, this time they put so little cheese (significantly less than any other time I’ve been) that most of the marinara sauce was still uncovered. I asked for more cheese and the woman with pretty hair said it’s extra. Although this never happened before I said “ok”. She then skimpily placed a small amount of cheese (still less than what a regular cheese topping has ever been and still less than an acceptable amount for any regular pizza let alone one that’s being charged extra). I mention that I only get one topping, pepperoni, out of all the options. After no more than 8-10 pepperonis are placed on the pizza I mention that’s the only topping I want and I would like a good amount please. The woman then says that’s extra as well. I only wanted the two things, cheese and pepperoni, and this little $10 pizza is turning into a $15 pizza to save money on toppings. This has never happened here before and it felt as if the lady making my pizza wanted to give the least amount of toppings as possible, leaving me feeling almost as if she pays for the toppings out of her paycheck. This is an unfortunate way to keep a relationship with a regularly returning customer. It saddens me that the management has created an extremely frugal environment and unfairly price gouged place where I now don’t feel comfortable to get my lunch. As a customer I felt awkward and taken advantage of and truthfully I would like to return if management allows for an environment where I feel like I can order a fairly priced item. I’m not one to try to get more than what’s fair, but this was simply unfair/not reasonable. I don’t wish for any repercussions for the lady with the pretty hair, I just want the employees to treat customers fairly. I told her I’m sorry I will have to go somewhere else and I can tell she was a little frustrated which lead me to feel a bit awkward declining purchasing something that’s clearly taking advantage of me. From the moment I walked in, the staff were welcoming and the setup was clean, modern, and well-organized.
The topping bar was a dream: fresh spinach, artichoke hearts, mushrooms, red onions, cherry tomatoes, black olives, green peppers, you name it, they had it. I layered on everything I loved, and the team behind the counter handled it with care and precision. Watching them prep the pizza on a wooden peel and slide it into the blazing “FIRE DECK” oven added a theatrical touch that made the whole experience feel special.
When my pizza came out, it was a colorful, veggie-packed beauty with a perfectly charred crust and melty cheese that tied it all together. The flavors were vibrant, and the ingredients tasted fresh and thoughtfully sourced. It’s clear Pieology takes pride in letting customers craft something personal and delicious.
