Our experience with this business has been nothing but a nightmare.
On 11 June 2021, we purchased 7 tickets for $1575 from the truffle farm in Canberra to attend a truffle hunt and degustation on 3 July 2021. Due to the Covid Sydney lockdown which lasted July to September 2021, we were not able to attend the truffle event we booked on 3 July 2021. We emailed Jayson requesting a refund as we could not go due to the Sydney covid19 lockdown. Jayson replied saying that the tickets were non-refundable and a credit voucher would be sent to us for the 7 tickets purchased which we were happy with. We waited several weeks for the credit vouchers to be sent to us with several follow ups via email to Jayson. Jayson never responded. We ended up calling Jayson on 9 July 2021 and he said he would send us our credit vouchers the next day. Next day came and nothing was received. We waited another 7 days before sending another follow up email on 16 July 2021. No response again from Jayson.
After waiting a month for Jayson to respond, we decided to lodge a dispute with our bank on 28 July 2021 for the 7 tickets given the amount of money we had already paid was not small ($1575). Shortly after we lodged the dispute, our bank responded saying they had contacted Jayson and that Jayson will provide the credit vouchers. Jayson then sent the credit vouchers to us on 4 August 2021. We notified our bank that we had received the credit vouchers from Jayson so that the dispute can be closed.
Fast forward to 11 May 2022, we emailed Jayson to rebook a truffle hunt and degustation on 4 June 2022 with the 7 credit vouchers. Jayson responded saying “Its my understanding that you made a complaint last season with your payment provider and that put your payment in dispute”.
We ended up calling Jayson on his mobile number explaining the reason why we lodged the dispute (we lodged the dispute because he was radio silent and non-responsive in 2021 and we paid $1575 for the tickets) and that we would like to rebook a date. Jayson was extremely rude and hostile over the phone saying that we caused him to do hours of extra paperwork due to the dispute we had lodged in 2021. Jayson spoke to us in a condescending tone and said he would not release the credit vouchers unless we pay him an extra $205 for the paperwork he had to complete for the dispute. We told Jayson we will be lodging another dispute with our bank as he was unwilling to release the credit vouchers to which he laughed and said “I won the dispute, you lost”. Jayson had lied to our bank in 2021 saying he would provide us with credit vouchers which was not true. To anyone considering attending a truffle hunt, I would strongly not recommend dealing with this business. Rating 1 star is generous for this business.
Thankfully, after explaining the full story to our bank for the second time, our bank agreed to refund us the $1575 for the tickets. We are just glad we got our money back and never have to deal with...
Read more👀 I researched so many truffle farms for my birthday and this was the one, I settled on because it looked the best!! The only way if I would’ve chosen another place is if you could bring your own dog haha. I’ve always wanted to go truffle hunting, I joke that its my retirement plan to retire on a truffle farm.
We booked a $200pp truffle hunt and degustation 12:30-3:30pm to join the adorable truffle dog team for an interactive, truffle hunt followed by a decadent, six-course, truffle degustation. We drove up to the grounds and our group was extremely big, probably too big, I think they keep them at 30 guests now but it felt like double. Apparently the night truffle hunts have less people. So many tourists!
Established in 2016 Jayson and Australia's best truffle dog team offer a truly amazing truffle hunt experience. Jayson is such an truffle expert, he guides you through everything you've ever wanted to know about truffles.
Once the perfect truffle is found, everyone heads back to the warmth of the truffle shed for a six-course degustation. Their Executive Chef prepares the truffle dishes in front of you while teaching you all the secrets to using truffles at home, including not using truffle oil because its fake!!
💥 The farm is stunning, based around a lake. As you hunt for the elusive black truffle through the forest of 8,000 oak and hazelnut trees. I love dogs and at the end of the day they let out all the dogs from the back of the ute including puppies!!
💁🏼♀️ The executive chef is Damian Brabender who also owns OTIS. His knowledge and insight and food was truly amazing, we actually tried to book into OTIS but it was booked out.

They also have non alcoholic wine, white wine and champagne on offer.
🍴 We came back to the truffle shed to a table with sourdough and truffle-infused butter and plenty of wine options. The sourdough was delicious, we tried not to fill up on it but god it was heaven.
Next up was truffled-infused creme pasta with shaved truffle. This dish was truly amazing, I ate every last bite. The pasta was slightly al dente and the sauce was very creamy so it was so delicious.
Then we were spoilt with scallop with truffle. The scallop was fresh, thick and soft and the truffle creamy texture on top was to die for, the best scallops i’ve ever had perhaps.
Up next was beef cheek with beetroot puree and truffle butter. Such a deliciously messy dish that melted in our mouths!!
The cheese course was simple crackers with truffle and triple brie which was beautiful! I would have just enjoyed the cheese by itself it was that good.
This was a truffle-infused pannacotta with a layer of chocolate crumbs. It looked liked milo! You could taste the truffle in the velvety cream.
It was truly an amazing degustation, I would recommend this to everyone!

Then, we followed Jayson and his trusty Labrador, Dingo, out among the hazelnut, English oak, and French trees. Watching Dingo expertly sniff out 5 to 7 hidden truffles was a highlight—especially when volunteers were trusted to dig them out, adding a hands-on element that made the experience even more memorable.
The degustation that followed was clearly crafted by Kanny, formerly a chef at Quay, who knows exactly how to let truffles shine. Each dish was elegant, balanced, and respectful of the ingredient—from the crispy pea truffle pie to the seared Gundagai lamb, all the way to the playful trufflemisu featuring truffle-infused eggs aged for 48 hours and artichoke ice cream. Every course reflected a deep understanding of how to elevate truffle without overcomplicating it.
We enjoyed the expertly paired wines throughout the meal, which complemented each course beautifully. To finish, we indulged in truffle Old Fashioneds and Negronis—bold, aromatic, and the perfect way to close the dining experience. Despite the group size of around 40, the afternoon felt personal and unrushed. Jayson and the waitstaff took time to speak with each group individually, making everyone feel welcomed and looked after.
A standout moment came when Patrick proudly commented on how fabulous his plating placement was—a genuine and lighthearted reflection of the team's passion and pride. His attention to detail absolutely deserves a pay rise.
Before heading off, we picked up a few goodies to take the experience home with us: a 22g truffle, truffle honey, truffle gin, and a beautifully infused brie—each one a delicious reminder of the afternoon.
As the sun set, we visited the dog kennels while waiting for our Uber—a peaceful, grounding way to end such a special day.
Although we didn’t get to try the food truck, we were told Matt Moran called it the best cheeseburger he’s ever had—which says a lot. We’ll absolutely be back for that, and whatever new experiences Jayson and his team create next.
