This place, tucked away in a quite picturesque wine region of Croatia, Bibich Winery delivered to our group of friends an unforgettable tasting experience. Despite its modest size, this winery exudes charm, making it stand out among the rest. The staff at Bibich is exceptional, showed warmth and knowledge, ensuring every visitor feels welcomed and attended to. We welcome waited for at the door as we parked our car and escorted to into the premises. These guys have passion for wine. It was obvious to see that passion shine as they guide you through the tasting by offering insightful information and answering questions with patience. The attention to details was surprising. They carefully curated pairing snacks that elevated our tasting experience, enhancing the flavors of their selection of wines. From crisp whites that we’ve had the Debit bottle was our favorite. After the tasting, The owner took the time to showcase their portfolio of wine and spirits which demonstrates their craftsmanship. Our group of 6 took some pictures, chat with the staff who went the additional mile to even booking a dinner reservation for us at a beautiful restaurant in Old town Trogir through their connection network. From the moment we arrived, we were warmly welcomed by Jelena, who was not only knowledgeable but also incredibly passionate about the wines and the history of the winery. Her enthusiasm and expertise added a personal touch to our visit that made it truly special.

The setting of Bibich Winery is absolutely stunning, with its beautiful vineyard views and charming ambiance. Each wine we tasted was a revelation, showcasing the unique flavors and craftsmanship that the winery is renowned for. Jelena guided us through a delightful tasting journey, pairing each wine with delicious local bites that perfectly complemented the flavors.

Bibich Winery is one of those rare places that feels like a well-kept secret, yet it deserves every bit of recognition it gets. This family-owned estate offers an experience that goes beyond a typical wine tasting. From the moment you arrive, you're welcomed by smiling staff, and most probably some of the family members that are always there.

Everyone in the Bibich family seems to play a role, from working the vineyards to running the kitchen, hosting guests, and managing the winery’s international reputation. You can feel that in every detail: on the plate, in the glass, and in the stories behind each bottle.

The wines themselves are nothing short of outstanding. A journey through indigenous Croatian varieties like Debit, Maraština, Lasin, Babić and Plavina reveals a terroir-driven identity of the winery.Then there’s Shiraz, domesticated here for a long time and nurtured over years, which has become one of Bibich’s signature expressions, bold yet elegant, and undeniably local in spirit.

We tasted Pinot Sivi, Posip, Shiraz, Merlot, Babich, Bas de Bas. The whites had a somewhat darker color than we have in the US, but were quite delicious. The PS is the Pinot Gris grape, aged 1 year in stainless, but is not too sweet and has a crisp finish. The Posip is 1/2 on stainless and 1/2 on oak - delicious! Nice complexity, but only a hint of butter. Not overdone at all. The Shiraz reminds me of an Australian. Aged in French oak. The Babic is aged in American oak, which was a surprise to us, and imparted interesting scents and taste - but also delicious. The Merlot is aged 2 years in French oak - nice flavor but an oakie tannic finish. 5 years old but needs more time to mellow. The Bas de Bas reminded us of the Dingac we had recently. 2 years in oak and a 90% Syrah and 10% Merlot field blend - but tartare nothing like what you might expect in North America. Dark chocolate is the first flavor - yeah - Dingac like. 15% alcohol also makes it seem like it could be fortified (it isn’t, but you get the idea). A nice after dinner pour for sure.

Each sip was a revelation, constantly redefining my idea of a "favourite." We arrived as wine novices and left feeling like connoisseurs, thanks to the generous sharing of knowledge and history. The local dishes served alongside the wines were simply divine, each one a Michelin-worthy culinary masterpiece. We were captivated by the stories behind each wine and dish, learning how they intertwined with BIBICh‘a rich history. This was truly an unforgettable experience that we can't stop raving about to our friends and family (who are probably a bit tired of hearing about it by now! 😅). We can't wait to return to BIBICh Winery, highly recommend!
