Probably the best tempura I have ever tried in Japan Expensive, luxury and the best Japanese tempura your good money can buy.
Old tempura store with a long history, now managed by the 3rd generation professionals. Located on the 35th floor of the MaruBiru (Maru Building) just in front of the grand Tokyo Station.
You sit in a U shaped counter with 10 seats in one of the rooms. Be sure to catch a glimpse of the beautiful Tokyo scenery from the 35th floor window.
Here the master chef will come in and start your experience. He carefully pours in a smooth yellow egg mixture and adds in ice cold water. Next, he slowly add the flour and then artistically mixes everything in refined, delicate strokes. It's quite a show if you watch the fine details.
He then presents the guests the freshest ingredients of the day and explains each one. Watch carefully as he skillfully straighten the shrimps like a chiropractor. I asked him why and he explains this is done to prevent the shrimps from curling into the infamous C shape. And then with a slight dip of the batter, the shrimp enters the fresh oil shielded by a beautiful crafted copper cover done in traditional Japanese tsuchime style.
The tempura coating is unlike any other tempura. It is extra thin, super crispy and almost oil free. So when you bite into the freshest shrimp, the shrimp retains the springy texture. When you bite into the fish, the soft fluffy meat blooms among the crispy coat. When you bite into the mushrooms, the juices overflow with distinct fauna fragrance.
For the course, you can choose from an assortment of very premium stuff like black fur Wagyu, lobster, karasumi, oysters, etc at additional prices.
