While doing a road trip vacation thru New England, my wife and I decided a visit to a maple farm in Vermont was something we must do. As it turns out, Baird Farm was THE choice. Jenna was the most wonderful and gracious hostess, and she took us on a personal tour of the farm which included going into the woods to see the vast tap and tubing system along with the pump facilities, and this was followed with a tour of the sugar house where the raw sap is collected and reduced down to the syrup we all love. It was SO informative, and it is mind blowing in scope when you see up close the amount of work and effort that goes into maple farming. It takes roughly 40 gallons of sap to make one gallon of syrup. This farm collects sap from thousands and thousands and thousands of trees thru an interconnected tubing/vacuum system and after seeing this, I have a completely new love and respect for maple syrup. Also, while we were there, they were collecting honey from their beehives and I was able to get a jar of honey scooped straight from the hive. There is also a little store where you can buy syrup products including 4 different color grades of syrup and 2 kinds of infused syrup. We were presented with a "flight" of all the syrups and were able to taste everything. The infused syrups were VERY interesting and delicious in taste - not at all the way you might expect them to taste. They even have ketchup! I will say if you do this, beware, because you won't be able to make up your mind and will end up buying one of everything like we did. Also, they have a website where you can order any of their products after you run out of what you buy there. I can't say enough about our wonderful and friendly hosts, and how welcome they made us feel to be there. If you are ever in Vermont, do yourself a huge favor and add this to your list of experiences. The drive getting there (from the Waterbury area) is breathtakingly beautiful with covered bridges and waterfalls along the way. You will not regret it! Very highly...

We ended up visiting multiple farms and purchasing maple syrup from five different locations. Here are three reasons you should visit Baird: First -- the tour! We signed up in advance for Jacob's tour, which was extremely informative (and hilarious)! We didn't just learn about the process of making maple sugar, but also the history, the politics, the drama! Second -- Baird's maple "philosophy." Baird's maple syrup is organic, and it turns out that requires a lot of environmental stewardship. The objective at Baird isn't just to sell syrup, but to help people understand, appreciate, and protect the forest. Yeah, very Vermont haha. I was surprised to see they had left in all the non-maple trees on their property and weren't tapping maple trees until they reached a large size. Hooray for forest biodiversity and longevity! Third -- the SYRUP! It's good, real good. Something you'll immediately notice about Baird (vs. other places) is they don't have all the maple extras (some of which you should definitely try, and I'm glad I bought elsewhere). They don't make maple popcorn or candies or fudge or any of that. They are very focused on the syrup. There is a clear distinction in flavor between the four kinds, and they are all good (our favs are amber and dark). We are so glad we made the trip, and we'll be ordering syrup online in the future!
