They have one of the best duck and rabbit meat. I purchased now a couple of times rabbit and duck and the meat was always flavor full and succulent. So glad I found this farm. I am from the EU and had a hard time finding the quality I was used too. Live 45 minutes away but worth the drive every time.
Duck Roasting how I do it:
2 teaspoons coarse salt 1 to 2 teaspoons crushed Juniper 1 tea spoon sage Pinch Sumac
Mix all herbs with little oil and put on duck, Best is put duck over night uncovered in Fridge to dry skin Put herbs on and let stay for the rest of the day in the fridge. 1/4 cup of honey
• Start the duck by roasting it at a higher temperature of 425 degrees F for 15 minutes, then decrease the oven temp to 350 degrees F and roast for 1 hour and 15 minutes. At the 60 minute mark, brush half of the honey over the duck, then cook for 10 minutes before brushing the duck with the remaining honey.
• If the juices are still running pink after a total of 1 1/2 hours, let it roast another 15 minutes before pulling it out of the oven and tenting with foil for 15 minutes to let the juices redistribute before carving. Be sure to reserve your thanksgiving turkey because they go really fast. They even make soap! This is a farm that's run by a husband and wife and their family. These folks worked in the corporate world for years and decided to change their whole life and help change other people's lives by buying this farm and selling their goods directly from their farm.
Their processing is very clean and there meets and products are absolutely all organically raised and fantastic! It's always a great conversation when I go over to the farm.
