I grew up on a dairy farm in MN, and developed a taste for good quality food, as we had a large garden, sold outstanding sweet corn every summer, had some fabulous apple and cherry trees as well as eating raw milk every day, all with great health. I have always loved biology, and earned a degree at the University of Minnesota, in biology, and then moved down to Chicago and carried out doctoral studies in neuroscience at UIC, studying neurological diseases, as a I have always had a fascination with the brain! I then spent 5 years doing research in the Physiology Dept at Northwestern as a post doctoral fellow, studying how chronic pain affects the brain.
I guess part of my motivation for my studies, is that Huntingtons Disease runs in my family, which my mom had and passed from years ago. I was also diagnosed some years ago, and even though I am not in the science arena any longer, my background helps a lot. I have always been sensitive to food, and have realized that is because the HD mutation is manifest through our diet. Most of the food out there causes severe fatigue, and I have followed the carnivore diet for the past few years, which has greatly reduced my symptoms.
I was previously getting grass fed beef from MN, where I am from, via my siblings, who would bring it down to IL. I was so relived to find an outstanding source of beef much closer! Last year I went through a 1/8 beef from Brass farms, which was fabulous, and I just placed an order for 1/4 this past May, which has been great. This is by far the best beef I have had. It is a huge answer to prayers! I sleep better at night knowing I have an outstanding source of beef nearby, which is making a big difference in keeping HD at bay. (There is a 20 min video on Rumble by an HD patient who is keeping his symptoms at bay by doing the same thing as me, eating organic, and carnivore, you can google carnivore and HD to find it).
I read tons of books on nutrition because I have always had a high level of sensitivity to food, because the HD mutation is always there. This society is doing everything wrong! Beef sometimes gets a bad rap because anything in the store is such bad quality it has to be dyed red to get rid of the nasty grey hue! In fact grass fed beef is one of the highest foods out there for nutrition. Thank you to the Brass farm for doing an outstanding job fighting back, against the absolute junk that passes for food these days.
A few resources: Dr. Dale Bredesen, has successfully demonstrated how to reverse Alzheimer's Disease with nutrition. Sue Becker (Bread Becker), has some great info on all that has gone wrong with our bread the past 100 years. Dr. Stasha Gominak, is a sleep doctor that has a lot of great information about the things our society started doing wrong, going into the factories about 200 years ago, leaving the outdoors, and tons of health problems started then. I also like Dr. Joseph Mercola, who started a natural health website, and has great information. I also like Sally Fallon with the Weston A Price Foundation! Just a few of the most helpful places...
Read moreTL;DR - Brass Family Farm's beef tastes great, is better for you than grain-fed beef, is a good price especially when you buy bulk, and buying from them means my money goes directly to the people raising the animals instead of the four big meat conglomerates. Stephen was really nice and made the process very easy and I will be getting more beef from them in the future. Prepare your freezer if you're getting a 1/4 or more! One of the pictures I'm including shows the entire top of our freezer completely full of meat, and that's only about two thirds of a 1/4 beef (I shared the rest with my parents).
The long version - I've been looking to get away from buying beef from the grocery store for a number of reasons and I was excited to find Brass Family Farm nearby. Unlike most beef produced which is grain-fed and controlled by the big four meat conglomerates that eat up all the profits and starve ranchers and farmers, with Brass Family Farm you're getting grass-fed and finished beef living great lives on pasture and your money goes directly to the people raising the beef instead of four giant corporations with record profits. Not only does Stephen take great care of his cattle but also the land which he's gradually restoring through regenerative agriculture.
I got a grill pack earlier this summer to try their beef and it was delicious. I felt I could taste a difference between their beef and grocery store beef and I don't think it was my imagination.
I went ahead and got a 1/4 beef in September. I was unsure about the process because I'd never had to decide exactly how I wanted the meat prepared or ordered a large amount of beef with so many different cuts directly from the butcher before. Stephen followed up during the process to check whether or not I had any questions but he had provided such detailed instructions (be sure to read the instructions!) that I understood the process and had no questions.
Payment was easy. Pickup from the butcher was a bit of a drive but was straightforward and easy. When buying bulk you're paying for hanging weight before processing, which is something to keep in mind, but it's still a bargain.
My family and I are very happy with our purchase, we feel great about where our money is going, and we will be...

After years of purchasing grass-fed beef from the grocery store, my experience with Brass Family Farms was a refreshing change. This was my first time ordering a whole cow directly from a local farm, and I couldn’t be more impressed with the quality, value, and overall experience.
Stephen was incredibly helpful and responsive throughout the process, making it easy for me to navigate the purchase. Brass Family Farms stood out to me not only because they offered whole cows but also because of their proximity to my location. Their commitment to quality is evident in every cut of beef.
Having the convenience of beef in my freezer has saved me both time and money. The fun of preparing cuts I’ve never encountered before has been an added bonus. Beyond the logistical benefits, I chose Brass Family Farms for its health advantages—grass-fed beef is one of the most nutrient-dense foods, and I’ve felt the positive effects since incorporating it into my diet.
