Dear Joe and Mary I ought a package of bone in pork chops last Friday. I also bought a package from a local store not wal mart or target ,I don’t shop there. On Tuesday evening I had company for supper and told them it was an experiment. I grilled both sets of chops on a George Forman grill. Then we cut them into pieces so that everyone got the same amount of each type. When the others ate their first IPP chop they ask what type of meat was this. I said pork chops theask if o was sure I hadn’t opened a steak instead. They couldn’t belive it we pork. We looked to the end of table where a little six yr old boy was and he was trying to all of in his mouth. His mom told him to spit out on his plate we were going take his meat. And he ,a six yr old said it’s good we all said to just eat regular we wouldn’t steal his meal. Your chops were ate first then the store ones last. They ask what was the difference was. I explained that IPPSwine were nerd for the marbling and moisture in the meat plus to do so or a grazing braised feeding system. And that the pigs we were used to seeing were bred to stand up on slatted floors in big houses and come running every time the feeder kicked on. Then be slaughtered and able to be handled as the process called for. But long story short Joe thank you for giving me a taste I hadn’t had since my early life span ,9yrs-to about twenty four years of age and they weren’t so good at the last period. The friends want to taste some bacon and some ham. So I’ll decently be back for some more. Plus your eggs that I’ve eaten had great yolk color that stood up good. The album wasn’t watery and runny and tasted great. This started out to praise your pork but your vegetables especially lettuce and greens Strippy tomatoes and carrots were great. As far as CSA Farms go, Tuckaway is incredibly convenient. Pick-ups are scheduled and they send out emails informing what will be included weekly. They also prewash most of the veggies and fruits in the box. I am sure that as they continue to grow and understand their soils better, they will be able to offer greater varieties of produce too.
