I hated pork growing up. So often it was dry, tough, too fatty and bland in flavor.
I was real skeptical when we ordered our first half. I figured it would be my wife and kids eating 90% of the lot, save for the bacon. She started cooking with it, and I was shocked at how different this was from everything else I had previously. The flavor was rich and complex; the fat was inviting, melt off the side, and the meat was moist! And it has been satiating, unlike the commercial grade pork. We eat less poundage in a meal, and get more satisfaction. It is so much more filling.
