There are plenty of trails to explore. Everytime I've visited the Manatee observation area there has always been sea cows. A pod or two of dolphins as well. Same goes for the bridge in and out of Titusville when it comes to dolphins. There are spots that brush acreage has been burned out for ecological management so don't be alarmed but do be mindful to not be around when they are burning an area. I'm in Titusville miles away and we get blasted by ash and smoke when it goes down. Be mindful of tortoises crossing the road. If you're going to move them out of the road be careful.. they have excellent reach and are quick with a bite.
