I have sampled and purchased a variety of cheeses from them at the Eau Claire Farmers Market, all have been excellent!

These are all farmstead cheeses made from sheep's milk and tend to be drier / harder due to lower lactose content. Perfect for me since I like aged cheeses.

Bohemian Blue and Wischago are the ones I've purchased so I've been able to cook with them, but I've also tried a few of the others. There is a new softer cheese that is meant for melting, so if you prefer softer cheese, they have that option for you also.
