I am an avid bread baker and a new customer for Wild Hive Farm. I recently purchased the Rouge de Bourdeaux Whole Wheat Bread Flour and the Heirloom Baguette Flour (also Rouge de Bourdeaux). The whole wheat bread flour was used to create sourdough loaves in three variations. 100 pct. whole wheat; 50 pct. whole wheat/50 pct. white bread flour; and a darker, more rustic bread that combined whole wheat, rye, white bread flour, and dark malt. All of the loaves were made with sourdough starter. The result was uniformly great crust and crumb and an amazing standout flavor. The baguette flour made the best baguettes I have produced (also using sourdough starter). Again, the crust, crumb and flavor were astounding in comparison to standard bread flours. I recently found the perfect solution to my perennial difficulty in finding a reliable source of hulled barley and barley flour--I ordered them directly from Wild Hive, along with a few other things (rye chops for instance--a wonderful hot cereal when combined with steel cut oats).
