Gilay Estate — Hotel in Quirindi

We stayed at Gilay Estate last weekend and we just cannot stop thinking about it since getting back to Sydney. This is exactly what the Hunter New England was missing.

When they asked us what time we’d be arriving so the woodfired hot tub could be fired up to the perfect temperature for arrival… We knew we were in for a treat. Upon arrival on a clear afternoon, we were speechless from how magnificent the views were.

Literally every little detail of this luxury cabin has been so well thought out. From the design of the build and the amenities: the hot tub, the Gozney pizza over, the fireplace, the firepit and retractable grill… To the amazing bubbly and Hunterbelle cheese, French linen sheets, Hunter products, Lululemon yoga mats and most of all: the luxuriously thick Bemboka towels and bathmats.

The last time we used Bemboka towels at a hotel was at Como The Treasury in Perth (which was ranked 2nd best Hotel in the world a few years ago). And yet here we were in Quirindi using the same luxurious Turkish towels. It’s hard to fit everything we loved into one Google review but I hope this gets the point across!

Staying at Gilay was the best way to switch off, enjoy a glass of bubbly in the hot tub, cook amazing pizza in the Gozney, and literally have the best sleep ever while looking out at the stars over the Liverpool Plains.

Our stay at Gilay Estate was truly magical. The breathtaking scenery combined with luxurious amenities delivered a genuine five-star experience in a peaceful country setting. From the moment we arrived, we felt welcomed — the thoughtful touch of bubbles on arrival was a lovely surprise and set the tone for a relaxing getaway.

Throughout our stay, we especially enjoyed the fire-heated hot tub and the cleverly designed fire grill, which added so much charm and warmth to our experience. Surrounded by the sounds of birds and the scent of wood fire, we felt deeply connected to nature, allowing us to fully unwind.

Thoughtful inclusions like yoga mats, board games, and cookbooks encouraged us to slow down, be present, and truly embrace the disconnect from our busy lives. The easy-to-use pizza oven, paired with the optional pizza dinner package, was another highlight — making delicious, traditional homemade pizzas within minutes was a real treat and well worth the extra purchase!

Alex and Sandy were outstanding hosts, offering excellent communication leading up to our visit and providing helpful tips and suggestions for local activities.

We had an unforgettable stay at Gilay Estate to celebrate a special occasion. From the moment we arrived, the property exceeded our expectations — beautifully designed, immaculately presented, and surrounded by the most stunning natural scenery. The attention to detail was exceptional, from the thoughtful touches inside the hut to the way the outdoor spaces have been curated for both relaxation and enjoyment. It was the perfect balance of luxury and comfort, and we felt truly at home in the heart of the picturesque Liverpool Plains. Whether it was enjoying the peaceful surrounds whilst sipping wine in the hot tub as the sun set, sharing meals together using the amazing cooking facilities, or simply unwinding and recharging the batteries, every part of our experience was memorable. Sandy and Alex generously share a variety of itineraries and experiences for the round trip and we’re so glad we were able to indulge for a few nights.
