Niks 4 Star Hotel Restaurant – A Four-Star Enigma in Sevlievo
Sevlievo. A town that, according to Wikipedia, is one of the wealthiest in Bulgaria. A hub of industry. A beacon of economic prosperity. A place where foreign investors pour in their euros like well-meaning relatives at a wedding.
Sevlievo. A town that, according to my own two eyes, looked more like it had just survived a particularly ambitious apocalypse movie.
To be fair, perhaps it was the time of year—the kind of cold that makes buildings hunch over like old men shielding themselves from the wind. Perhaps it was just our timing, catching the town in the awkward twilight between industrious hustle and well-earned rest. But as we drove in from Sofia—a two-and-a-half-hour journey through varying shades of grey—Sevlievo did not quite match its online biography. The streets were eerily quiet, the houses a charming mix of “historically quaint” and “structurally concerning,” and the overall vibe suggested that the town had spent all its wealth on a secret underground bunker that we were not invited to.
But the people—ah, the people! Hardworking, determined, and clearly engaged in pursuits more meaningful than writing sarcastic restaurant reviews on the internet. There was a tangible sense of community, the kind that makes you feel like an outsider until you’ve eaten at least one meal among them.
Which brings us to Niks 4 Star Hotel.
Now, I don’t know who Niks is. And I did not ask. Some mysteries are best left unsolved. What I do know is that this so-called “four-star” establishment promised us a good meal, and after the drive through the Bulgarian tundra, I was more than ready for it.
