Whilst touring the South of France on a week long Motorcycle trip with my brother and father (heading to Mallorca) we found this quiet little gem in google maps out of the blue (as we have with all our hotel destinations on the trip) and this was another amazing find ! The ride through the national park to get here was nothing short of breath taking with the most incredible views of the rolling hills and vineyards. The little village is so quiet and immaculate, the hotel itself stands out as being very well looked after. The hosts were very welcoming and as we were out of season and their own Resturant was closed, the owner kindly walked us up the road to another place to eat where he introduced us and asked the staff to take extra special care of us. Must make a note of the rooms at this hotel. They are amazing !! The attention to detail is class and has the decor and fittings of a five star boutique hotel back in the UK..... Read moreWe were delighted to find such a quiet place away from the July hordes in nearby Carcassone. The host was friendly, polite and helpful and made us feel very welcome. We were impressed with the attention to detail in the house. The room was furnished with good quality furniture and fittings and was impeccably clean.||We stayed in the Reglisse room and were surprised by how quiet it was at night. Wonderful!||In the morning breakfast was waiting for us out in the garden area and in the evening we enjoyed a meal there too as it joins onto their restaurant. We would definitely return again.||The area itself was full of surprises. Minerve is well worth the visit, don't miss it's natural bridge. Les Quatre Chateaux de Lastours was breathtaking as was the Grotte...

A limited regional wine selection but in my opinion a selection of the best the Minervois has to offer, you will always fine something to suit your palate.
