During a 2022 stay in Malaga we had the remarkable fortune of having Chef Leon as our private chef for two evenings. It would not be an overstatement to say that these evenings were among the select highlights of our experience in Spain. And this from a family that does not take eating lightly. We range widely in ages and taste profiles, and Leon thrilled us all with four course meals each night. We walked away from each experience with the sense that we had encountered something that was new and unique but with the satisfying quality of comfort food. Whether by land or by sea, the creations that made it onto our plates and the sauces and sides that accompanied them were little miracles.
Mind you, the place that we were staying was not a chef’s paradise. Its kitchen and toolset were competent but basic, and Leon had never been on-site prior to his visit. But between what Leon came prepared with, and the magic that he conjured in that kitchen, four perfectly timed, cooked, and composed courses came out onto our table.
As if the triumph weren’t complete enough at that, Leon is also a genuinely lovely man. His easy-going spirit and humor made the whole experience a comfortable delight. His insight into the cuisine that he creates is clearly animated by the worldliness carried from his Michelin-starred career and his evident love of the locality that he has now made his home.
