We stumbled upon Lease 65 back in 2017 while holidaying in Tasmania. The small roadside sign simply read ‘OYSTERS $10 Dozen’…and that was the start of a great relationship! Craig gave us an informative chat about aquaculture & oyster farming before plying us with the most delicious fresh oysters I’ve ever tasted…and I’ve sampled a few! We revisited St Helens in 2018…1st stop was Lease 65 to see Craig and grab some big juicy oysters. Tip: It’s great to say you’ve ‘shucked’ your own oysters but seriously pay the extra couple of bucks to get the professionals to do it…it could save an unwanted visit to the St Helens Emergency Department. Look, if natural oysters is not your palate (then there’s probably something wrong with you), try some Lease 65 oysters done ‘kilpatrick’. This is my wife’s secret recipe (so don’t tell anyone)…Oyster (shucked in shell) + diced Bacon + Worcestershire sauce (and a little bit of chilli for the fanatics). Read moreFANTASTIC oysters and dirt cheap. Large Tasmanian Pacific Oysters going for $15 a dozen unshucked and $25 a dozen shucked. These oysters are some tasty, briny mothershuckers. Recommend getting them shucked if you have never shucked an oyster before, we learned the hard way as we onerously shucked two dozen oysters at Percy Steel Reserve while we attempted to hide our shame as people walked past us and stared at us with righteous condemnation. Honestly, we deserved it because we were truly partaking in some undignified bullshit. If you would like to shuck your own oysters, remember to wear protective gloves, possess a proper oyster shucking knife, and have water and a scour on hand to clean the oyster surface of grime and grit so the debris doesn't fall into your oyster once shucked. All these accoutrements are requisite for having a truly salubrious oyster adventure. 5/5 See our happy faces - we got 60 oysters total and zero vibrio poisoning.

They just sell oysters, and you have to eat somewhere else. I took mine to our accommodation and shucked a dozen for immediate consumption and compared them with already opened oysters. Self-shucked oysters taste far better(obviously): creamier with added brine saltiness from inside the shells. I normally shuck South Australian oysters with a bit of effort but these Tassie oysters are easy to open with a right tool.
