I was just a tourist there on New Providence for the New Year junkanoo about 15 years ago, but I found Big O's dock at Potter's Cay. At his small wharf shop I discovered the world's best conch salad. It was made then and there, crafted by the man himself, over good conversation and a magical process of chopping, seasoning, and mixing. It took time, and we didn't mind waiting. The next day, before we flew home to Key West, I took my wife and young daughters back for a taste. Those bowls of fresh seafood were to us the most beautiful expression of Bahamian culture and foodways--compounded by the incredible care and natural welcome that Big O gave us.
