I visited Tobacco Caye Paradise in January for a couple nights. I stayed in a tiny house sitting over the water with the waves lulling me to sleep that first afternoon I arrived; awakened only by someone blowing a conch shell calling us to dinner. All the guests gathered family style in a open dining room looking out to the sea.
