The Cavedoni family's vinegar production facility visit was the standout moment of our two-week Italian vacation. Our family of seven was warmly welcomed by Marcello, Paolo, and Elisa, who shared their seventh-generation legacy of crafting premium balsamic vinegar. Our daughters absolutely adored Paolo (the dad) who kept our taste buds happy throughout the gourmet visit.
Elisa taught us about Trebbiano and Lambrusco grapes, hand-harvested and pressed to create the must, cooked to concentrate flavors. This was followed by a tour of the barrel room, where we saw barrels dating back to 1860, used in a meticulous aging process involving oak, chestnut, and cherry woods, explaining the differences between DOP and IGP vinegars.
Marcello shared his family's passion, the history, and tradition of making Balsamic Vinegar. We love how he is honoring his family by keeping this tradition alive for future generations.
The tasting was exceptional, sampling vinegars from youngest to oldest, alongside their pure Lambrusco Grasparossa di Castlevetro DOP wine, produced in limited quantities. For a vinegar lover like me, choosing the best acetaia to visit was very important. And Acetaia Cavedoni did not disappoint. We drove for 1.5hrs from Verona to Modena. Maybe some would choose the ones closer to the city centre but the location of Acetaia Cavedoni is worth the drive. It is surrounded by hills covered with hectares and hectares of vineyards. It was so charming :) We got the warmest welcome from their patriarch Paolo and one of his sons Marcello who gave us the tour. Afterwards, we shared some local produce (parmigiano reggiano and several cold cuts from the local salumeria) with them and tasted some of their prized products as well. We stayed for 4 hours or so but didn't feel like leaving after 😂 we just wanted to sit there and enjoy the smell coming from the barrels while chatting with the Cavedonis about local produce and their acetaia. This was without a doubt one of the best visits we've had in Italy. And we will for sure go back whenever we are in the area again.
