For many many years, I am an absolute fan of raw haring especially the so called Hollandsche Nieuwe available mid July. For even as much years, I am always looking for the best place to get this haring. I can tell you there is a huge difference across the many places where you can get haring. There are a lot of places I tried and in some cases I couldn't even finish the haring. It takes a connaisseur and craftsman to serve you delicious haring and Zee and Zo are my absolute favorite in the wide Den Bosch area. The size of a perfect haring, at least for me, is about 42 haring in a bucket. That size has the best fat/proteïne ratio for taste and soft/hardness. It is made clean right out of the bucket which is no longer taken out of the freezer some 24 hours before. The cleaning is done while you are waiting and quite a bit is taken off from the neck, belly and back as those parts tastes too fishy and oil/ish. Without those you really taste the umami from the sea. Coloring of the haring should be more purple-ish than red an blue-ish than green and there should be a slight gloss on it. The older the haring or the longer ago it has been cleaned the haring turns to red an green and looses its glossiness also the meat becomes harder and fishy taste becomes stronger then umami taste. So Zee and Zo for me the best in the region for haring, but they also have a wide variety of other fresh and fried fish and lovely salads other dishes and sandwiches with fish if you like. MAAR alleen het restaurant was echt smerig tafels niet schoon stoelen plakten van gemorst drinken, ook de vloer was echt niet schoongemaakt en dat was niet van een dag. Er loopt wel veel personeel wat jong en niet deskundig is heb eventjes zitten kijken. Maar dan zie je echt dat het een bij baantje is voor die jongens/meiden het interesseert ze niet. Tip voor de eigenaar personeel iets meer uitleg geven Hoe ze de boel schoon moeten maken!! Daarnaast personeel een cursus HACCP geven is hard nodig zeker met een open keuken.
