I really want to love this place. The people in the retail section are lovely and helpful. But I’m just so upset about our butcher order. We brought 2 pigs in. These are not feeder hogs but mangalista and kunekune. For one we asked for plain pork sausage and the other we asked for dixi bell. Well, they labeled none of it. So now it’s luck of the draw what I pull. And let me tell you, the somewhat spicy Italian style sausage is not good in Asian pork dumplings etc. Then comes the bacon. I specifically asked for regular, NOT THICK bacon as these breeds really need a thin cut. So far all of the bacon is extra thick cut. It’s inedible. I am not so upset about the money wasted on this butcher, but about growing out these pigs on extremely expensive non gmo feed for more than a year only to have useless bacon and mystery meat sausage. Will never be going back here. Word of advice, take a photo of your cut sheet and insist that everything is labeled.
