The sides were all wonderful, crisp coleslaw, not too much mustard in the potatoe salad, very cheesey and interesting mac and cheese but the baked beans!!! muah (chefs kiss) I loved the beans, i could taste the sweet peppers and the smoke, delicious! The brisket was definitely the star of dinner. Seasoned perfectly and juicy! I'm leaving 4 stars because the pulled pork was on the salty side for both of us (and usually he likes salt) and the ribs were very dry and very fatty (how does that even happen???) When it's all said and done we will definitely be going back and maybe someday I'll give the ribs another shot but for the foreseeable future the Brisket and the Beans will be favorites...

I made the mistake of not ordering ahead. I showed up ten minutes before the truck opened thinking I’d be sure to get all my favorites. To no surprise, Dubuque sure does love Bad Ash BBQ! The hour and ten minute wait in line was worth it as expected. Meet was delicious as always (brisket, burnt ends, and pulled pork.) Splurged on trying the cobblers and cheesecake since the sides were sold out. They were delicious! Will need to make sure to pre-order next time to score the platter and ribs.
