I had a whole pig processed in 2018 and I only received 2 lbs. of bulk sausage from a 300 lbs. pig. The bacon tasted old and or spoiled, smelled horrible and tasted even worse. The hams were tolerable but had no taste even though they were cured. Chips of bone were found in the pork chops as well. I went to talk to the butcher and he blamed it on the type of pig that I had processed. Plus I had to pick up my fresh meat early, pay for the entire processing, and had to come back to pick up the cured meat at a later date. Inconvenient for sure. The best ham & bacon ever yanked out of a pig. All the cuts are clean good looking pieces. No weird looking end cuts. Ground pork & sausage great flavor but also perfect grin for the right texture. The owner said we could have the missing product from his own hog and was ready to go. Upon making the hour drive back down there for the third time, the staff informed me that they didn’t have the meat for us yet and was had to leave empty handed and told six of our seven pounds wouldn’t be ready for another two weeks.
