I do not recommend using this processor. On two different times, over the course of 2 years, had sides of beef "processed" by Carolina. Both times, the beef we received had "sour" taste (found out later, after starting to prepare the beef at home). Also, the beef seemed to still be very bloody after thawing and removing from packaging. The first time, thought it might be a one-off or something for which we may have been responsible. So, I let it pass. 2nd time, Year 2, SAME PROBLEM. Only, this 2nd time, in addition to everything else we'd already experienced, we never received all the beef we'd ordered on our cut sheet. We didn't, nor did our neighbor that purchased the other side of the same cow. Our cut sheets were identical. I called back to verify and was the told "the butcher was not in that day". The person I did speak to though, that day, pulled the cut sheets and verified to me that the cuts in question were, in fact, on the cut sheets). We used this processor since Carolina was recommended to us. That was a mistake and we gave the benefit of the doubt. Only after I went online to view this business did I notice that not only do they "process", but they also have their own "butcher shop/ meat market" in the front. That was interesting. Worst butcher place ever, our meat tasted freezer burnt, it smelled bad and didn’t taste like it was cured or smoked. I think we were given some OLD meat they had in their freezer for years then kept ours. Will NEVER use again and I suggest you don’t ever use...
