Best meat place I've ever been to. They even have a delicacy that isn't made anymore called render loaf. My German great-grandparents used to make it for us when I was a little boy. Only one other place in Iowa makes it and it's nothing compared to steeges. I even taste a hint of nutmeg:)
If you buy their render loaf put it in a pan on medium with the lid on. The meat will basically melt looks weird but don't worry. Then remove the lid and turn to medium high. The trick to cooking it is just to keep folding into itself and flattening it out. Do this for about 30 minutes until it starts to get nice and crispy. Then flatten out everything in the pan to about 1/4 of an inch. Cut little 2-inch square sections. Keep flipping the small sections so they get a nice brown on both sides. After both sides are browned nicely put the meat pieces on a paper towel for 5 minutes then eat. It's a fantastic meat to add to quiche, omelettes and breakfast burritos or just to...
Read moreWorst locker experience ever. Brought our goose meat into the locker at the end of March and just got it back today July 20. I was lied to twice and told the meat was being processed but it wasn't. I called more than half a dozen times, stopped at the locker 3 times, sent a contact us form, and sent a message through Messenger. The owner lied to me a few weeks ago when I stopped by the locker. He said the goose was being processed (it was a Friday) and it would be wrapped Monday. I called a week later and was told it hadn't been processed yet. I told the woman that answered the phone what I was told by the owner. She took my name and number and told me he would call back, he never did. So almost 4 months later we get our goose sticks back. It was $3.50 a lb, the flavor is ok but they are mushy. We will never use this locker again....

All cuts were done very well and this is the first place that pattied my burgers in squares, which I like cause then the square slices of cheese cover it perfectly. If you haven’t tried their dried beef, you need too. It’s really, really good. Looking forward to picking up...
