Read moreThis is the BEST boudin east of the Mississippi. I am born and bred cajun raised in the heart of Acadiana, however I know d"good food" is a matter of opinion. So I'll give facts. The boudin is a 50/50 ratio of meat to rice. The meat is Boston butt pork roast (no liver or gizzards or less than desirable parts) seasoned but not very salty nor spicy.
