I have done 4 orders with Korte, and they have made mistakes on 2 of them. This most recent mistake was throwing away the fat trimmings and the liver from 2 hogs I brought for processing when I specifically asked to keep them. They asked me if 5 pound packages were ok for the fat, so I know they understood what I was asking for, and these were Mangalitsa pigs. They had a large fat cap, and their fat is prized and sells for a nice price. I also asked for 4 whole hams, and they chopped two of them into ham steaks. This is after spending almost $700 on the pigs to be processed, almost $1000 for resale labels, and over $2000 in feed to raise the hogs. Needless to say I'm extremely disappointed in the service. They are “ old school “meat market w/ old school methods to their processing procedures that we all should appreciate! Coming from a person to whom was a union butcher for 17 + years the folks at Korte have a great business that everybody should patronize. Read moreOk, Korte has amazing egg rolls and made some delicious jerky with the deer we dropped off. However, we requested no tallow in our ground deer meat and got more tallow in those rolls than the rolls with tallow had. Also, the deer we processed earlier in the season was requested without tallow and every roll had tallow. It was about 80 rolls with tallow. That deer was processed for 79 year old consumer that can't consume fat and he usually relies on that meat throughout the year. Now he has to either trade his meat or go through extra steps to remove the fat. Korte has been great in the past but because of these two errors, we will need to find a new...
