The owner Barbara led our tour, giving us background on the overall history of chocolate as well as how Mindo came to be.
In the process of roasting, grinding, and winnowing our own cocoa, we were able to sample many unique items along the way (including a molasses-like syrup made from the fruit, chocolate tea made from the shells, rustic chocolate and much more).
Finally, we made our way into the kitchen to make our own chocolate bar and package them up.
