I have been buying smoked trout from Mill Creek for several years and it is always great. Not too salty, but full of smoky flavor. We eat it as is or make a spread with chives, lemon, and capers. Traditional is with creme fraiche, but we also use Greek yogurt, which works perfectly well. Great people too....
