Jose from Madrid Paellas was amazing. He was punctual and very organized. I enjoy making paellas myself, and I can attest to Jose‘s authenticity in his style of cooking paella. His Sofrito was very flavorful and so was his broth which made the overall experience of the paella one of the best I’ve ever had outside of Spain. His attention to details included dressing the tables with tablecloths and lights, and with a bread and salad station complete with condiments. His timing was perfect, waiting to start cooking until all the guests arrived (no one likes cold rice).
