A fabulous place to visit, whether you are new to apple brandy or a seasoned expert. If you are in the latter camp, David and Zoe (the owner-operator couple) have a wealth of knowledge and it seems like there is nothing they like to do more than introduce people to their product and the orchard, and chat about the process. There aren't very many places like this one, where you can have as in-depth and personalized experience as you want to and never feel rushed. Ambix Spirits, an apple brandy distillery, just opened in Sebastopol and we had to check it out. Really enjoyed the tasting! David did a great job explaining their pommeau (brandy/cider mixes) and brandies which are very smooth and tasty! He discussed the apple varieties and how he chooses different characteristics to get the result he wants. For now Ambix sources their apples from local orchards but they’ve planted numerous varieties on their property for the future.
