The market does custom cutting based on your specifications. If you are new to custom processing, they will help you determine what cuts are best for you. The beef is dry aged in the chiller for 14 days before cutting. That helps to improve both tenderness and flavor.
In my case, I've been very satisfied with the yield from live weight to hanging weight. The final cut weight depends on how much you ask to be trimmed and whether you get cuts with bone in or boneless. The vacuum packed meat stores very well. I've had beef in a chest deep freeze for up to a year with no loss of quality or flavor.
