I had the pleasure of attending the Croissant Class at Vituperio Artisan Studio on March 17, 2024, and it was an experience worth savoring. Led by the talented instructor, Javiera Montoya, this class was a delightful blend of education, hands-on learning, and culinary indulgence.
From the moment I stepped into the studio, I was impressed by the warm and welcoming atmosphere. Javiera's personable demeanor immediately put me at ease, and her passion for the art of baking was evident from the start. Throughout the class, she proved to be not only knowledgeable but also incredibly professional and attentive.
One aspect of the class that stood out was Javiera's hands-on approach. She constantly circulated among the three tables, providing personalized feedback and instruction to each participant. Whether we were shaping dough or perfecting our laminating technique, she was there every step of the way, ensuring that we all had the support we needed to succeed.
At the culmination of the class, Javiera and her two assistants treated us to an array of croissants and salad. From classic plain croissants to indulgent chocolate-filled ones, as well as savory options like turkey & cheddar, and danish with almond paste and fresh fruit, each creation was a testament to the skills we had acquired during the session.
The quality of the croissants we produced was truly exceptional, a testament to Javiera's expertise and guidance. But beyond the delicious pastries, what truly made this class memorable was the sense of camaraderie and excitement that permeated the room. Sharing our creations with fellow participants created a sense of community that added an extra layer of enjoyment to the experience.
I left the Vituperio Artisan Studio Croissant Class feeling inspired and empowered, eager to continue exploring the world of baking. Read moreTaking the Sourdough Masterclass at Vituperio was one of the best investments I’ve made in my baking journey. I had been searching for local baking classes that offer comprehensive technical training, but most of the ones I found were more about the experience than the education—a fun weekend social event for couples and friends rather than serious learning. (When people show up with champagne and orange juice for mimosas, you know it’s not a rigorous training.)
Not at Vituperio.
Don’t get me wrong—it was a social experience and we had fun, but the focus was on learning. Every participant was there to truly understand the craft, and the class itself was exceptionally well-run and organized.
Bottom line: Before this class, I had never even attempted to bake sourdough. After this class, I can successfully and consistently produce a good bake. That alone speaks volumes.
Oh, and the lunch was fantastic. Honestly, I’d go back just for that! But more importantly, I’ll be going back for many more classes because Vituperio is the real deal—a personal, intimate, and professional culinary school.
The staff was warm and welcoming, and Javiera, the Head Baker, is a phenomenal teacher. She’s kind, thoughtful, sophisticated, and truly knows how to teach. What more could you ask for?

Read moreI participated in a virtual Sourdough baking class with Javiera at Vituperio and 10 of my girlfriends and had a fabulous experience! The class was a 2-day, 3-part series where Javi walked us through the mechanics of using a starter culture, the benefits of eating sourdough/fermented breads, and the technique of getting a bread to turn out! Within the class we made two bakes: a sourdough loaf and a focaccia. Javi gave us a toolbox of tips, tricks, and work arounds such that even beginning bakers, like myself, could use to produce a good loaf without all the fancy tools and equipment that professional bakers have. By the end of the class, I felt confident in my understanding of the bread baking process such that I could carry on coherent conversations with fellow bread enthusiasts, troubleshoot my own bakes, and begin to experiment with new ones!
I took this class in the beginning of 2021, just following the great mail tsunami of xmas 2020 - Javi went through great lengths, repeatedly braving the tsunami, combatting many "lost in the mail" attempts, and made sure that myself and the rest of our class all had starter to work with for the class! Amongst this whole process, she was very communicative and flexible with scheduling.
