The newly opened brunch spot in North Van, Loam Bistro, is an absolute gem! ☀️ With this weekend’s perfect sunny weather, I had to share this place ASAP to inspire your weekend plans! 🌸🍽️✨ 🍳 Originally, I came for the pistachio toast… But the Oeuf Cocotte (baked eggs) completely stole the show! 🧀🔥 It reminded me of a famous Swedish breakfast spot in Portland (with a 2-hour wait!). 🥖🍖 Fresh greens, eggs, diced ham, and a mountain of cheese, baked in a cast-iron skillet—paired with crispy baguette slices, it was pure heaven in one bite! 😍👌 🥔 We also tried the salmon potato rosti… The salmon was incredibly fresh, and the dill yogurt sauce was perfectly balanced. �🥒 The potato rosti had a delightful chewiness—way more exciting than regular waffles or pancakes! 🥞💫 🌰 The pistachio toast was legit amazing too! Loaded with real pistachio paste and crushed nuts on top—just don’t expect it to be a dessert; it’s not sweet at all! 🍞🤎 (But that’s what makes it so good!) ☕ For drinks, I had the hojicha latte… Rich, aromatic, and so comforting! 🍵💙 Their signature butterfly pea latte (spotted at the next table) looked Insta-worthy, and the avocado croissant? Definitely next time! 🥑🥐 🌿 The café itself is adorable—pastel pink and filled with plants!
