💛The world’s number one restaurant in 2022, perched atop the Copenhagen Stadium, offers a breathtaking view in a city with few high-rises. The menu is unveiled in an intriguing way, like opening a long-sealed envelope. 💛“Green Classic” - Salted herring paired with crispy seaweed, a fresh appearance masking a salty and savory taste, a reimagining of a traditional Danish dish. Caviar - Pop the bubbles of white fish roe and crispy stock cubes, a burst of saltiness and umami in your mouth, layered with a creamy milk jelly and kale sauce. 💛Beetroot - As someone who isn’t a fan of beets, this dish won me over. The beetroot and jelly soaked in a rich, creamy sauce, a harmonious blend of flavors. 💛Oysters - The first serving of oysters had shells, but the staff promptly replaced them. The fresh oysters were incredibly sweet and delicious! Apple - The presentation was unique, like eating a plate of Cthulhu. The rich hazelnut sauce with crispy apples and salty caviar was a brilliant combination, even after a night of caviar overload. 💛Mushroom Soup - There’s nothing like sipping a hot bowl of mushroom soup on a rainy day. The last sip revealed pickled hops at the bottom, accompanied by beautiful flower-patterned crisps, bridging the appetizer and main course. 💛Walnuts - Hand-cracked fresh walnuts evoke childhood memories, served with Jerusalem artichokes and sauerkraut. Scallop - Tender scallops entwined with blackcurrant branches, an unexpected yet delicious pairing of flavors and textures. Bread - The best bread I’ve had in four days, the fried bread was so aromatic! True to the sugar-oil combination. 💛Juice - A surprising delight, fresh pine needles are lit in front of you, smoking the glass before pouring in the grape juice. The rich woody aroma instantly transported me back to the Lingyin Temple in Hangzhou. 💛Monkfish - A two-in-one fish dish, served with a ceremonial presentation. The pan-fried part was firm but standard, while the stuffed monkfish and sauce were a bit too salty. 💛Assorted Vegetables - Simple yet delicious, a Chinese-style stir-fry. Seabuckthorn Dessert - A divine dessert! The balance of tart and sweet with seabuckthorn and white chocolate was perfect, with carrot and pumpkin adding unique flavors. This dessert had me licking the plate. 💛Chocolate - Two different chocolates, one classic dark chocolate, and the other a grainy, roasted chocolate that I couldn’t stop eating, perfectly blending the aroma of grains with chocolate. 💛Yogurt Ice Cream - Served with verbena, pine nuts, and pear, but the best part was the tiny meringue inside, adding complexity to the dessert. Three petits fours - Milk chocolate, cinnamon crisps, and berry cake. The flavors were average but made for great photos. 💛The only downside was the server’s cold demeanor at the end. For a former world number one, it’s a serious critique.
