🌟 Tucked in a quiet alley in Sweden’s third-largest city, Vollmers feels worlds away from the sleek Nordic restaurants across the strait in Copenhagen. Warm lighting, hyper-local produce, and a soundtrack that keeps the mood light set the tone for modern yet deeply rooted Scandinavian cuisine. 🌼 Deep-fried sourdough – the loaf’s tang cuts through the richness of the fry, while Swedish vendace roe and crème fraîche wake up winter-weary palates. Pear – poached at 60 °C until candy-sweet, paired with chive oil and cheese: salt, smoke, and fruit roll across the tongue in perfect sequence. 🌼 European whitefish – five-hour smoked, served with a sauce of sour-beer dough and vinegar-based gelée. Gentle smoke and layered acidity intertwine seamlessly.
